[Fixed] Mobile sidebar and AI insights visibility hotfix

Fixes

• The sidebar now collapses into a hamburger menu on phones, removing unwanted horizontal scrolling and making every page fully usable on mobile.
• The “AI insights” option is now hidden for customer admins, preventing confusion about a feature that is not yet self-serve; it remains visible for Classet superadmins.
